Easy tips for Great BBQ Ribs
Six easy Steps
1. Do not boil your ribs!
Boiling
your ribs will steal most of the prospective flavor from the ribs and the fat that is needed for grilling.
2. Cook your ribs slow!
Tender BBQ ribs are achieved by cooking over a low temperature. Keep the heat between
250 and 300. If your heat is lower than 250, you risk drying the ribs of moisture, if your heat is higher than 300 it is too
hot for tenderizing. I cook most of the time around 280.
3. Season the ribs at lease four hours before you plan on cooking them.
Dry rub them with whatever spice
rub that make you happy, four hours will give the rub enough time to penetrate and flavor the meat.
4.
Cook
the rib over direct smoky heat - no flames.
Use wood such
as oak, citrus or hickory. These woods will achieve the back-yard flavor that you are seeking. Remember
to keep the ribs away from flames.
5. Do not cook ribs with sauce. Wait
until the ribs are done to mop with sauce.
Sauce
will cause the ribs to burn and char.
6. Let the ribs rest in foil or a cooler
for one hour before serving
Resting
the ribs will allow them to release more fat and this also helps make the ribs tender. While they are resting they are also
cooking slowly from the heat that builds up in the cooler or foil.
